"everything" cookies

Ingredients 
1 stick unsalted butter, softened
1/4 cup granulated sugar 
2/3 cup lightly packed brown sugar 
1 large egg 
1/2 teaspoon salt 
1 teaspoon vanilla 
1 cup all-purpose flour 
1/4 teaspoon baking powder 
1/4 teaspoon baking soda 
1/2 teaspoon cinnamon 
1 1/2 cups rolled oats
1/2 cup chopped cooked bacon 
1/3 cup chopped dried mango 
2-ounces bittersweet chocolate chunks, chopped 

Directions
Preheat oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper. 

In a standing mixer, cream together the butter and two sugars on medium speed until fluffy. Add the egg and continue beating until smooth. On low speed, add the salt and vanilla and beat for 1 minute. 

In a small bowl, combine the flour, baking powder and soda, and cinnamon. Add flour mixture to the bowl and mix on low speed until the flour disappears. Using a rubber spatula, fold in the oats, bacon, mango, and chocolate until well combined. 

Using a 2-ounce ice cream scooper or 2 tablespoons, scoop the cookies onto the baking tray. Flatten the round dough using your fingers. Bake in the oven until edges turn golden brown and set, about 12 to 15 minutes. Cool and serve. 

Bake with soul. Eat with pleasure!
