2 cups cooked pasta (elbows)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk, hot
1/4 teaspoon ground mustard
1/2 cup shredded extra-sharp white cheddar
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 cloves garlic, thinly sliced
1/4 cup Panko breadcrumbs
Set oven to broil.
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly pour in the milk and whisk to combine. Add the mustard, nutmeg, cheese, and season with salt and pepper to taste. Reduce heat to low and allow sauce to thicken; stirring occasionally. Shut off heat and stir in the pasta using a spoon. Combine thoroughly with the sauce and transfer to an appropriate size baking dish.
In a sauté pan, heat the olive oil over medium heat. Cook the garlic until golden brown. Shut off heat and mix in the Panko throughly using a spoon.
Sprinkle the breadcrumb mixture over the Mac & Cheese and broil until golden brown, about 6 minutes. Cook with soul. Eat with pleasure!
