2 large potatoes, cut into 1/4-inch thick matchsticks
2 tablespoons canola oil
2 teaspoons herbs de provence

Preheat oven to 400 degrees Fahrenheit. In a large bowl, combine the potatoes, canola oil, herbs de provence, salt, and pepper. Spread onto a baking sheet and roast in the oven until tender and golden brown, about 30-45 minutes.
