Roasted Broccoli and OnionsĀ

Ingredients 
12 ounces fresh broccoli florets 
1/2 red onion, chopped into 1/2-inch thick pieces 
4 cloves garlic, sliced in half longways  
2 tablespoons flavored fat (bacon, duck, or just some good quality olive oil) 
Kosher or sea salt and crushed red pepper flakes 
1/2 teaspoon freshly grated lemon zest 
1/4 cup chopped nuts (your favorite) 

Directions 
Preheat oven to 400 degrees Fahrenheit. Line baking tray with aluminum foil. 

Arrange broccoli, red onion, and garlic on baking tray. Toss vegetables with oil, salt, crushed red pepper, and lemon zest then spread into an even layer. Roast vegetables until tender and golden brown, about 20 to 25 minutes. Remove tray from oven and carefully transfer cooked vegetables to a serving platter. 

In a dry skillet over medium heat, toast nuts, moving occasionally until fragrant, about 3 minutes. Garnish vegetables with nuts and serve.
