2 1/2 tablespoons canola oil
1/2 cup popcorn kernels
4 tablespoons unsalted butter
Juice and zest of 1 lime
2 tablespoons Sriracha sauce
Kosher salt, to taste
In a large pot, combine the oil and the popcorn kernels. Cover with a lid and place over medium heat; stirring constantly, shake the pot until the popcorn finishes popping, about 3 minutes. Remove the popcorn from the pot and set aside.
In the same pot, melt the butter. Stir in the lime juice and zest, and the Sriracha sauce until well combined. Cool the mixture and pour over the popcorn. Mix the sauce over the popcorn until well combined. Season with salt. Serve.
