1 pound ground beef
2 (15.5-ounce) can chunky salsa
2(15-ounce) can black beans
2 large sweet potato, diced
1 tablespoon chipotle powder (or chili powder)
In a large pot, over medium-high heat, cook the ground beef until brown on all sides, stirring occasionally, about 8 to 10 minutes; drain the excess oil.
Stir in the salsa, black beans, potatoes, chili powder, and 1 cup water, and bring to a boil. Reduce to a simmer and cook until potatoes are tender, about 15 to 20 minutes. Season with salt to taste.
Serve up with some boxed cornbread or brown rice. Cook with soul. Eat with pleasure!
