Beer Caramelized Onions

Yield | 2 cups | 5-8 minutes prep | 30-40 minutes cooking

Ingredients
2 tablespoons olive oil 
2 tablespoons unsalted butter
4-5 large yellow onions, sliced into 1/2-inch thick half rings 
Kosher salt 
1 (12-ounce) can Bud Light Beer 

Directions
Heat olive oil and butter in a large saucepan over medium heat until butter melts. Stir in the onions and 2 teaspoons kosher salt. Stir the onions occasionally, until it begins to evenly brown, about 10 minutes. Using a wooden spoon, stir in the beer vigorously, scraping the bottom of the saucepan to remove all the brown bits. Reduce heat to low and cook until onions are rich deep brown in color, about 20 more minutes, stirring occasionally. 

Cook with soul. Eat with pleasure! 

Notes
- IF you don't have beer, use stock, water, or whatever you got lying around. (Perhaps not Kool-Aid, ;))
