What You Need
2 tablespoons sugar
2 teaspoons cinnamon
3-4 bananas, split in half lengthwise
8 ounces Mascarpone cheese
1 tablespoon confectioner’s sugar
½ cup chopped walnuts, toasted
¼ cup maple syrup
What to Do
Preheat oven to 450ºF. Line a half sheet tray with aluminum foil.
In a small bowl, mix together the sugar and cinnamon.
Arrange bananas on the sheet tray in an even layer. Spray bananas with cooking spray on each side. Evenly sprinkle the sugar mixture over both sides of the bananas.
Roast the bananas, cut-side down, until the bananas caramelize and turn golden brown, about 20 minutes. Remove from oven and set aside to cool.
In a small bowl, whisk together the mascarpone and confectioners sugar. Set aside.
Serve caramelized bananas with mascarpone, chopped walnuts and a drizzle of maple syrup.
