Classic Steak and Eggs

My cast-iron seared steak is mighty juicy and full of flavor. The runny sunny side up egg garnished with scallion was the perfect addition to this classic. This recipe is super easy and will have your mouth watering the entire time cooking. Comment below and let me know how your steak and eggs turned out! 
Ingredients 

2 tablespoons extra-virgin olive oil 
2 tablespoons unsalted butter
One 1-pound bone-in T-Bone Steak 
2 garlic cloves, peeled and whole 
1 bundle thyme, about 4 sprigs 
Kosher salt and freshly ground black pepper 
1 large eggs
2 scallion stems, finely chopped

Preheat the oven to broil at 500 degrees Fahrenheit. 

Preheat a large cast-iron skillet over medium-high heat, about 5 minutes. Add 1 tablespoon oil and melt butter in the skillet. Brown the garlic and thyme, turning every minute until evenly brown. Pat dry the steak with paper towel then season with salt and pepper on both sides. Turn heat to high and let the skillet get really hot, you should see it slightly smoking. Add the steak and sear on one side for 3 minutes, until a nice brown crust develops (do not move while cooking!). Turn the steak over and place immediately in the oven for 5 to 6 minutes to finish cooking. Broil until the internal temperature reads 120 degrees Fahrenheit for medium-rare. Transfer to a cutting board and let the steak rest for about 10 minutes before slicing. 

In the meantime, heat remaining oil a medium non-stick or cast-iron skillet over medium heat. Crack the egg into a separate cup or bowl, then tilt the pan so the oil collects in one corner. Gently slide the egg into the pool of oil, letting the outer whites set. Using a spoon, baste the hot oil over the upper surfaces of the egg whites, allowing them to cook. Carefully remove the egg from the pan and set aside. 

Place the whole steak on a plate, top with the sunny-side up egg. Garnish with scallion. 

Notes
- Make sure the steak is really dry before cooking. Otherwise, your steak will not develop a crust. Remember, color means flavor! 
- For a medium to well done steak, preheat the oven to 450 degrees Fahrenheit and cook for an additional 5 minutes or until your thermometer reads 135°F. 
- Remove the bone from the meat and cut the steak against the grain.
