4 very ripe bananas, whole
1 cup almond flour
3/4 cup whole rolled oats
1/4 cup light brown sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract
1/4 cup canola oil
2 large eggs
Preheat oven to 350 degrees Fahrenheit. Line a 9-inch by 5-inch loaf pan with parchment paper or spray with nonstick cooking spray.
Place 3 bananas and all remaining ingredients into a blender and mix until smooth. Pour batter into prepared loaf pan. Slice remaining banana in half lengthwise and place each half on top of batter, cut-side up. Bake in oven until loaf expand and is firm and golden brown, about 60 to 90 minutes.
Cool loaf on a wire rack completely before cutting. When loaf is cooled, remove from pan, slice, and serve. Tightly wrap leftovers and store in a container for up to three days. Alternatively, wrap and freeze leftovers and defrost in the oven at 350 degrees Fahrenheit before serving.
