1 rack baby back ribs
Kosher salt and freshly ground black pepper
2 tablespoons white miso paste
2 cloves garlic, grated
2 teaspoons ginger, grated
½ cup honey
¼ cup brown sugar
1 tablespoon sesame oil
2 teaspoons soy sauce
½ tablespoon freshly squeezed lime juice
1. Preheat oven to 375ºF.
2. Cut the ribs, dividing into two racks. Season ribs with salt and pepper on both sides. Transfer seasoned ribs to a tray lined with foil. Pour ½ cup of water into the tray and cover foil. Cook in the oven for 45 minutes to an hour.
3. In a small bowl whisk together the miso, garlic, ginger, honey, brown sugar, sesame oil, soy sauce, and lime juice.
4. Take ribs out of the oven and remove foil on the top. Base ribs with the glaze and cook for an additional 30 to 60 minutes, basting every 10 to 15 minutes, until golden brown.
5. Remove from oven, slice, and serve. Cook with soul. Eat with pleasure!
