no-fry sweet potato rosemary wedges

Serves 4 to 6 | Prep Time 10 minutes | Cook Time 35 to 40 minutes | Total Time 50 minutes

Ingredients
2 pounds sweet potatoes
2 tablespoons olive oil 
2 tablespoons roughly chopped fresh rosemary 
Coarse sea salt (such as Morton) 
Freshly ground black pepper 

Directions 

1. Preheat oven to 400 degrees Fahrenheit and position oven rack in the center. 

2. Rinse and thoroughly dry sweet potatoes. Peel potatoes and carefully slice them in half vertically, then cut each half into 4 to 6 wedges. Arrange potatoes in a single layer on a baking sheet. Toss potatoes with olive oil, rosemary, salt, and pepper. Roast in oven until potatoes are golden brown, about 35 to 40 minutes.

3. Cook with soul. Eat with pleasure!
