Pimento Cheese Burger

Ingredients
Extra-virgin olive oil
1 pound ground beef 
2 cups pimento cheese spread 
1 bunch arugula 
2 teaspoons lemon juice 
Thinly sliced red onion 
4 sesame seeded buns, split and toasted 

Directions 
Heat 1 tablespoon extra-virgin olive oil in a non-stick skillet over medium-high heat. 

In a large bowl, combine the ground beef with ½ cup pimento cheese spread. Mix together and form 4 equal size burgers. 

Cook burgers in the skillet until one side is golden brown, about 3 minutes on each side. Cook longer for well-done burgers. 

Toss two big handfuls of arugula in a bowl with lemon juice and a light drizzle of olive oil. 

Top each burger with 2 tablespoons pimento cheese spread, red onion, and the dressed arugula.

Cook with soul. Eat with pleasure!
