1 English cucumber
1 red onion, chopped
2 cups arugula
1/4 cup fresh mint leaves, torn
3/4 cup feta cheese
1/2 cup slivered almonds
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
Cut the cantaloupe in half using a sharp knife. Scoop out seeds and discard. Using the tip of the knife, peel the skin off the cantaloupe revealing the juicy orange flesh. Cut into medium 1x1-inch cubes.
Peel every other side of the cucumber. Remove ends and cut into 1x1-inch cubes.
In a large bowl, combine the cantaloupe, cucumber, red onion, arugula, mint, feta, and almonds.
Pour the vinegar into a separate bowl; season to taste with salt. Slowly stream in the olive oil while whisking until the vinaigrette emulsifies and thickens.
Pour enough vinaigrette over the salad to coat. Toss together and serve immediately.
