2 sweet potatoes, peeled

Preheat an oven to 425ºF.
Cut potatoes into 1/4-inch wide (matchstick) slices. Spread the potatoes in an even layer on a sheet tray and coat with oil; season with salt, pepper, and cinnamon. Roast in oven for 12 to 15 minutes, turning occasionally, until tender and golden brown. Cool for 5 to 10 minutes before serving. Cook with soul. Eat with pleasure!
