1 pound carrots (about 12-15 carrots), washed and dry
2 tablespoons curry or turmeric powder
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon fennel seeds
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 cup feta cheese
2 tablespoons chopped flat leaf parsley
Juice and zest of 1 lemon
Preheat oven to 425ºF.
In a small bowl, combine the curry, cinnamon, coriander, fennel, cumin, and cayenne pepper; mix.
Lay carrots on a baking sheet in a single layer; drizzle with olive oil. Sprinkle the carrots with all the seasoning. Season with salt and pepper. Using clean hands, massage with carrots with the seasoning to thoroughly coat.
Roast in the oven until carrots are fork tender, and golden brown, about 30 to 40 minutes.
Sprinkle carrots with feta, parsley, lemon juice and zest.
