What You Need
1/2 lb ground pork
1/2 lb ground veal
1/2 lb ground lamb
1-2 tsp of cayenne powder
2 tsp garlic powder
pinch of Kosher salt
pinch of freshly black pepper
¼ cup jar fig jam
4 oz blue cheese
1. Place all three meats into one large bowl. Sprinkle in the cayenne, garlic, salt and pepper.
Form into burgers.
2. Grill or use a cast iron grill griddle over medium-high heat to your desired temperature
(4-6 minutes per side to for medium-rare to medium).
3. Serve immediately with fig jam on the top bun and blue cheese on the burger.
